I should add that, while it appears you have the experience to realize this,
others may not so I'll say that if you are good at speaking without pausing
or stumbling for somewhat long periods and don't mind working from notes,
you may prefer to record in real time and edit everything afterward.  You
could record a discussion of something, then open the program and
demonstrate it, all in real time.  You could then edit the results
afterward.
I prefer doing things as I described.  It saves me the trouble of working
from notes and Sound recorder allows me to edit my speaking in real time.

I should also add, concerning the Microsoft Sound Recorder, that it has
annoying quirks and problems.  I've only used the program on two computers
and I have no way of knowing what results you will get but you may find
focus problems or perhaps another quirk that annoy you enough that you
decide not to use it.  But since I've only used the program on two
computers, I suspect, though I don't know, that you will find annoyances
working with it.  I put up with them but you may decide you don't want to
and would rather edit everything after recording everything, not in real
time.  You could use a program like Mp3 Direct Cut for such editing.  It is
particularly convenient for such editing.

It would be nice to to know about another program that allows you to edit in
real time.  If one exists, I don't know of any.

I will be sending a file to Drop Box, probably later today, which will
contain the Microsoft program, and a presentation I did years ago for
Accessible World's Tech Talk on working with the program.

Note carefully that if you are running a 64 bit version of Windows, the
program I am sending should be placed in the programs x86 folder and run
from there.  It is a 32 bit program.  You may get a message every time you
run the program that the registry can't be updated.  Just activate the ok
button and use the program.  It works as it should and the message, while it
may indicate a technical problem between the program and the registry, means
nothing in terms of performance.
