Diana,

Check the help file and enter BCC in the search field. You'll find how to get 
there using the marvelous ribbon now being used in Outlook 2007.

        If you go into the address book you will see 'To', 'CC' and ;'BCC' 
buttons once you've selected a recipient.
        I've noticed that once you've selected a BCC addressee once, the BCC 
button remains on the 'blank' message creation screen until Outlook is closed 
down.
