There are actually GUI config utils for Samba, but I haven't tried any of them. There's also SWAT, which is a mini webserver that'll do all the configuration for you. I'm not sure I'd trust it security-wise (I won't use it on production machines), and the issue of ease of use comes up: is it really easier to go through configuring swat just so you can configure samba?
