I use the same temp as for dry-mounting for 2 minutes between two pieces of
mat-board. Then I take it out and cool it under a heavy piece of glass for 5
minutes. Aluminum may be a better heat conductor, but glass works fine and
is easier to get get and to keep clean.

What is your dry mounting temperature?

I just checked the info for both Hunt-Bienfang and Light Impressions dry mounting tissue. Light Impressions makes a tissue called "Buffer Mount" that fuses at 160F minimum, this is the lowest temperature tissue I could find. Light Impressions "Color Mount" fuses at 170F. Hunt-Bienfang recommends 175F for its version of "Color Mount". Higher temperatures can be used with shorter fusing times but for color or RC B&W prints the lowest temperature is best. Old type dry mounting tissue needed temperatures on the order of 190F to 210F, this is too hot for RC and is much hotter than necessary for flattening. If you are using the press only for flattening prints fairly low temperatures can be used successfully, probably around 150F is probably the minimum for flattening in a reasonable time but I would experiment to find the lowest temperature that works.
Presses come with and without thermometers. My press is an old Seal Jumbo 210 without the built-in thermometer. I use an electronic thermometer to check its temperature. On mine the dial is reasonably accurate but its only a setting for the thermostat. Since the thermostat itself is adjustable the dial indications are not necessarily accurate and temperature should be checked with a good thermometer. Probably a meat thermometer would work, they cover the right temperature range.
