Sounds like fun! I absolutely loved my sourdough. It was the most exciting
thing, and I couldn’t stop checking the starter. (And it lived out on the
kitchen bench. It never occurred to me to do anything else with it!)
I’m not baking this weekend – freezer is already full of homemade bread and I
have my 10kg beef coming on Wednesday 😂 plus 2 kg beef bones for stock, and the
stock alone is going to take a lot of space in said freezer! It’s going to be
interesting…

etc

Dohn and I each have an iPad, iPhone and MacBook Pro. We took them all to
Perth with us recently, AND the Dell laptops we each have for work. Quite the
ensemble…
I hate Microsoft with the same passion you hate Apple! And let’s not forget
Adobe… I am still livid about what they did to me when I cancelled my CC
subscription but that’s not for a public forum. Suffice to say, they made
promises, broke them and in doing so broke laws, admitted it, said sucks to
be you and then stuck to their corrupt guns. I’m still tossing up whether I
can be bothered to take it further. I have all the screenshots and chat
transcripts.
Anyway, back to bread. My advice is to BOTH:
buy Nina a Kitchen Aid mixer anyway
make the no-knead bread recipe I posted (which was from NYT Cooking, and I
haven’t tried it, but it should be good – has rave reviews).

buy her a kitchen aid one last year after her back surgery. Louise and I had

Hi Justin,
I haven’t owned a bread machine for a couple of years. The kids complained
about the crust (the best bit!) and I eventually stopped using it. Boo. (It
also left an annoying hole in the middle. Pfft.)
I use the Thermomix to knead the olive oil bread I’ve been making. You could
use any electric mixer with a strong enough motor I guess, especially one
with a dough attachment.
But what I suggest is trying the no-knead bread I also posted a recipe for.
When I did sourdough I did a no-knead version after trying one that required
kneading (which, like the olive oil bread, was from the Bourke Street Bakery
book). The no-knead version was fantastic! Just let it sit overnight and then
do what you gotta do the next day without any kneading at all. The results
were as good if not better. I saw no reason to dirty the Thermomix after
trying it.
Having said that, the bread machine you are looking at looks fantastic!
They’ve come a long way in the last 20 years or so!

so you can obviously make the bread, but I’m thinking about using it do make
the dough (ie do all the hard work), stick it in a banneton and then finish
it in the oven.

Yeah I’d probably do that too if I had a chest freezer (depending on how big
it was!). The freezer in our fridge-freezer is too small as it is… I’m
expecting 10 kg of beef next week, which isn’t that much really but there’s
not a skerrick of room in the freezer and I’m wondering what I’m going to do
with it. 😂
