Turn off the auto insertion of greater than signs in OE if you do not like
them.
This is under tools, options, send, and plain text optins.

you'll get used to it. I use both as I have two accounts, and Outlook
definitely makes messages look more professional. as in, when you reply to a
message it outlook it keeps the message in tact without the stupid grater
than signs.
