Is that possible? I tried modifying the line
file/.zip >TXT|[300]PKUNZIP -v $1>$2
but I don't understand the syntax of mime.cfg enough to make anything
work.

Perhaps it would be a lot better to leave that line in MIME.CFG
commented out as the default setting.
