When I used it in my office in windows, I was just using a normal Dell tower
desktop keyboard.
The program stated that there was a certain type of keyboard it would not
work on, but apparently the one I had was not that type.

AFAIK, to support this, both the keyboard and the OS would need to support
N-key rollover. This is not a common feature on normal keyboards, but it is
found on some gaming keyboards.
