Tim, I had one of those - a Baby Speed in 2x3 format with a Graflok back. The 2x3 rollholder was the same size as a filmholder and had a couple of slots that the tabs on the Graflok back slid into. Shoot one roll, pull the rollholder off and put a fresh one on. Came in knob and lever wind versions. The 4x5 version had the rollholder permanently mounted on that large adapter plate which then mounted on the 4x5 back. A lot more cumbersome.

I always forget something. Calumet made a 120/220 roll holder for 4x5 cameras that will fit a standard spring back, at least most of the time. I find it will not clear the "ears" on the older wooden Graphic spring back but works fine on the later metal backs. The locking strips on the Graflok back improve the stability of the holder. BTW, the Grafmatic will tend to pull out of standard spring backs when changing films and really needs the lock strips on the Graflok and Graflex backs.
