I'm not entirely sure what the best scan settings would be when scanning from a printed book. The more resolution the better (within some limits). I've been using B&W mode on the illustrations from Brian Williams. That might not be best when dealing with a yellowed/greyed book page. I believe in this case that the threshold setting in B&W mode would be crucial in getting a good scan.

Perhaps an experiment is in order. Try scanning one illustration with
two different settings and send them to me to see which is most
workable. Depending on how smart the scanner or software is, you may
want to fiddle with the B&W threshold setting.

* 300dpi, B&W
* 300dpi, grayscale

A lossless image format such as Windows BMP would be best, but please
send them in a ZIP file or similar. :)
