The Hadley School for the Blind has a free 5 week course on Excel that is
very helpful for learning how to use the application. I love Excel and think
it is rather easy to use.

Yes, you could use Excel to do this. What you're describing is
essentially a small database, so you could also use a table in MS Word,
or a database package such as Access.
My guess is that you'll have to learn one of these, and you'll get the
most use out of learning MS Word, so I'd suggest you get a book on Word
and start learning about it, and tables specifically.
