The latter part's not true.  There is nothing in th headers of a mail
that has to have the recipient's address in it - consider how a mail
BCCed to you gets there - the info is in the SMTP envelope, which stays
at the last SMTP server involved, normally (unles you run your own) at
your ISP.  Some ISPs, not all of them though, copy the info that was in
the SMTP envelope to a fake header and include it in the mail. 
Generally that's an "Envelope-To:" header.  But not all ISPs do that.
