If it works, it is because of Windows/Word's smart handling of different file types. Other applications will throw up errors. To truly convert the image, more than the file extension must be changed. Every image format (jpg/bmp/png, and so on) has it's own "header" and unique signature information in the file contents. In this case, you'd need to copy the image to the clipboard from Word, then open up a graphics program. Microsoft Paint, Adobe Photoshop, Paint Shop Pro or Irfanview would all do nicely. Then, paste the image into your graphics app & save in the desired format. Then, and the only then, has the file been properly converted.
