You use NDS (eDirectory) instead. The Citrix farm could just be in a simple Windows workgroup vs. Active Directory tree. The roaming profile controlled by Zenworks can be stored in the users Novell home directory or any networked drive accessible by the user. There is no need for creating the user in the local SAM as it is done by DLU on the fly. I haven't attempted to run a mixed Novell/Zenworks and Microsoft AD environment so I can't really speak to how or if it works. I suspect you would need a tool like DirXML or Metadirectory services to sync up the 2 directory services otherwise you would have to manually sync user ID's and passwords (unrealistic with real security and real users). Anyone on the list done this?
