I think unsharp masking would produce the "tack sharp" look that you are after. The effect is to increase edge contrast in the image, and would be very effective in images of buildings. http://www.largeformatphotography.info/unsharp/ You can print 4x5 with that enlarger. Seems like a 4x5 camera, good lens, slow film, unsharp masking, and careful technique should be able to produce very high quality 20x24 prints. The examples you show don't display an extreme DoF, at least nothing that couldn't be accomplished with modest front tilt.
