But can you add appointments on a calendar while talking to some one on the
same IPhone?

I thought that the IPhone 3GS isn't capable of running more then one app at
a time.

No: they expect you to use the iPhone with it's headset That's all. Because
then you have access to the phone's full functionality, e.g. adding an
appointment to the calendar, then coming back to the phone app etc.
