Robert,
There's a 3rd way of doing a hardware upgrade: offline
backup/restoration (basically moving over the .edb/.stm files to the new
server), which doesn't involve using backup software, i.e. Veritas. And
it will probably be quicker than the online backup method, but this
seems more complicated. Here's the KB on the offline method:

Hi Robert,
You need not move all your mailboxes at one go. In fact you can actually
spread your migration over a number of days by moving the mailboxes in
small batches.
However ensure that you have sufficient disk space on your transaction
log drive, as you will see large number of transaction logs being
created, while moving the mailboxes.

Hi Allan,
If I start moving mailboxes I cannot stop in the middle of the process
right? I have to make them all at once cause exchange won't recognize
which mailbox is on which exchange right? So this move should be done,
overnight or no right?
