Robert, There's a 3rd way of doing a hardware upgrade: offline backup/restoration (basically moving over the .edb/.stm files to the new server), which doesn't involve using backup software, i.e. Veritas. And it will probably be quicker than the online backup method, but this seems more complicated. In fact you can actually spread your migration over a number of days by moving the mailboxes in small batches. However ensure that you have sufficient disk space on your transaction log drive, as you will see large number of transaction logs being created, while moving the mailboxes.
