Pressing the apply button is generally only needed if you are in a multi-page dialogue, and want to make some other changes. Pressing the apply button before continuing to the next page, saves your changes in the current dialogue.

I understand the use of Apply in Windows, generally, is simply toapply the effect you've chosen temporarily so you can see if you like the result. And OK is supposed to confirm your choice and save it.
