Since Xubuntu uses Gnome on the backend, it's not as much of a mess if you install the xfce desktop. Edubuntu is Gnome based and should not be a problem, you'll just get some additional apps, wallpaper and etc.
I find limiting my installation to one desktop is much cleaner and less confusing.
