No, those are "workspaces" within a single desktop. If you install an
additional desktop, you will be given alternate desktops that you can
use when you login; like KDE, Xfce, Gnome.

while inside the Terminal or should this be done from the CLI?
You can install an alternate desktop from Synaptic as long as you don't
completely un-install the current one you are using.
3. would it also be better to set up a diff user for that diff DT/Xterm?
You can login to an alternate desktop with your single current account.
Either would be neat I could use that ability to advantage I think.
I do use desk two now and then when I get into a long search like when
I had the confirmed 'H attack' I did a ton of reading. since being in
79th orbit I better watch all my chances close as I can. lol
