Can the Olympus ls 100 produce separate tracks simultaneously for each of the 3
external microphones I would need for the podcast? Can 3 external microphones
be connected to the Olympus at the same time,
If it can do the above than I could maybe import these tracks in audacity and
edit/mix them,

Further to Samir's suggestions: If you want a portable recorder that is
accessible, there are several in the Olympus range that have spoken menus. I
own and love the LS-100, which is the most expensive of their recorders. That
said, smaller ones will still make a more than acceptable recording for podcast
purposes.
If you use a portable recorder with in-built stereo mikes it would be difficult
to get good separation between two speakers. As for three people, that would
even be a challenge with a mixer going into Audacity. Provided your mixer has
at least three microphone inputs, each person could have their own mike.
However, unless you have a very clever (expensive) sound card you will not be
able to record more than two tracks at once. Audacity can certainly handle the
recording of more than two tracks simultaneously, but there is a limitation
with consumer grade sound cards. If you cannot afford a multi-channel sound
card, you could cut and paste one person to a new track. That could get
tedious, but is feasible.

I would recommend a smallish USB mixer or an external USB sound card
with a PC or laptop capable of running Audacity.
The zoom handy recorders are unfortunately completely blind unfriendly.
