Yes indeed, certain USB mixers such as the one that I mentioned has
the capability to send out audio in multi track format.

After a bit of research from my side, it appears that the older Alisis Audio
mixers support multi channel output and they are not too badly priced
either.

The Olympus LS-100 can do multi-track recording, but there are two
issues. One is that the feature is not supported by speaking menus.
The more significant issue is that it only has two mike inputs, so you
could not record to more than two tracks simultaneously.
I do not know the Zoon recorders at all, but understand some models
can accept up to four mikes and can record to multiple tracks. You
would have to learn the controls though, as they do not offer speech
feedback.
Now to multi-channel sound cards. My friend suspects that they would
start at around $300 but that is a guess and it is too close to dinner
to do more searching just now (smile). Behringa or Presonus may be
good starting points. You would need one with four mike inputs (they
do not come with three). They would connect via a USB port and you
could assign inputs to separate tracks in Audacity.
Note that we are talking sound cards, not mixers. They would do a
similar job but would be in the form of a box. I would also not be
surprised if something suitable would be more expensive. You would
also need three suitable microphones.
So there is some food for thought and I am off to have dinner.

I use the Behrinjer Zenix fx 1204 uSB. Compared to the rest of the
mixers out there, it is in my view the best most cost effective
entry level mixer on the market and most certainly will help record
your podcasts with relative simplicity.
It's not large, but I wouldn't call it an extremely travel friendly
mixer though.

I would recommend a smallish USB mixer or an external USB sound
card with a PC or laptop capable of running Audacity.
The zoom handy recorders are unfortunately completely blind
unfriendly.
