As a kid in Chicago I worked in a couple of pizza places..everything essentially was made from scratch...the dough, the tomato sauce. Mozzarella was freshly ground from blocks. All the veggies were farm fresh...the sausage was a custom mix of meats and spices. The ovens of course were all brick...the pizzas were all thin crusted...great memories...
