Forgot to mention:

With a 3-dimensional subject the 'pick two points' advice for
setting tilt leads to frustration.

The optimum solution may be that the plane of sharp focus/center
of the DOF cone only intersects the subject at _one_ point.

Then either o Put a stick in the ground to represent another point on the plane of sharp focus for setting tilts

o Focus on the one point on the subject and tilt the back
  so the near and far points are equally fuzzy.

Check tilt with the lens stopped down.
