What is happening with the enlarger is that the image and object fields are reversed from their camera position. The longest distance is equivalent to the object field, this is usuallyl where the paper goes in an enlarger, so, you are focusing the lens but it is similar to the situation with a camera at some distance from the subject. Also, if you are making a low magnification print you wind up doing what you must with a camera that does not have back focus namely moving the entire camera to focus and then adjusting the lens position to obtain the desired magnification. I move the enlarger to about the right place, focus, and then iterate as needed. I don't start by moving the lens into position firstand holding it there while adjusting the negative and head... then moving the lens again, holding it and moving the negativeagain.Ditto a view camera. If it's 1:1 I put the film plane 4x the focal length from the subject and focus, then oooch as needed.
