Just my two cents here, but the size of the spreadsheet should be
irrelevant inside a Citrix XenApp environment since it is just the screen
that is being sent over the line. Now when they print those spreadsheets,
then it will matter.
124ms is relatively high latency in my opinion. If my users get anything
below 100ms they start to see delays in typing, especially if they are fast
typers. I've got 250 users on at any one time on a 50mb link that also
supports our websites and email servers.

You’re asking two different questions here.
There’s WAN emulators you can use. I use WANem:

You can create an appliance. Just Google and you’ll find plenty of info.
Examples of great commercial tools for simulating sessions…
- Login VSI
- Goliath Logon Simulator
What’s your bandwidth and latency? How many users are you expecting to
host in the remote location(s)? Are they just using Citrix, or will they be
using apps outside of Citrix? Do you have QoS policies?

Is there a tool that will load a Citrix app 30 times and perform a
