Yes, I learned that tray method from Fred Picker and have been using it for
40+ years. Fred said to practice with some scrap film or negatives in the
light till we got the hang of it, then do it with real negatives we wanted
to process in total darkness. I've had no trouble working in complete
darkness.

always had no issues doing the sheet film shuffle in the dark. But as
mentioned earlier in the thread it gets a bit difficult shuffling more than
5 or so at a time. However, it’s very convenient to develop -N,N,+N all at
the same time.
Now, I typically develop 4x5 in a Jobo reels and 8x10 in the trays. I
shoot a lot more 4x5 than 8x10 so it’s not an issue having enough sheets to
fill the Jobo tanks. I typically only have a few or hand full of 8x10.
I even use PMK for the Jobo and trays.
That works for me. Your experience may vary.
