On buying large quatities of SodiumSulphite: I have been told that for
our purposes one should obtain the water free (anhydrous) form of
Sulphite because the crystalline form with the water molecules slowly
turns the Sulphite in Sulphate. Sulphate itself beeing harmless, you
wouldn't want to add Sulphate wwhen you were intended to add Sulphite.
I do not know what the state of the bulk Sulphite is
