that description is nicely put.
We call it 'gai (chicken) poot (draw your own conclusions here)
in pasar (ie non formal) Cantonese.
My husband avoids it, but my younger daughter and I fight over it.
It is succulent (and fat), and rather lovely.
I have seen them skewered together and grilled in Japanese
yakitori restaurants which specialise in charcoal grilled food.
