sweet potato with a tiny bit of Thai Red Curry paste, some butter as did not
want to open a can of coconut milk just for a tbsp. or two. Added a few
drops of the dressing.
The scallops came out to perfection which I served on a bed of rocket and
watercress and drizzled with the Thai dressing. Only a little as it was very
fiery.

Hal, I just found this too which similar but good description of bay
and sea scallops. The ones we buy here are quite large and have the
Orange roe attached. I recall way back when I lived in Florida that
scallops sold there were actually cookie cut out of something else and
for the life of me cannot think what....something like stingray.
Oh, found it, was right as stingray is one used to make the fakes.
