Yup, there used to be more of a problem more years back, when they were a
little less common and a bit more exotic.
I believe they used to stamp them out of skate...
I believe they remove the toe to enhance longer term storage...even frozen that
fatty part doesn’t last as long and can start to go rancid...
But most you see in store today is real, but there’s controversy a bit over the
preservative solutions used today on some of them.

Kelly, I never saw the orange roe in the U.S. which makes me think
scallops there are fake especially as they are perfectly round....cookie cut?

Pan-Seared Scallops Recipe
Hal, I just found this too which similar but good description of bay
and sea scallops. The ones we buy here are quite large and have the
Orange roe attached. I recall way back when I lived in Florida that
scallops sold there were actually cookie cut out of something else and
for the life of me cannot think what....something like stingray.
Oh, found it, was right as stingray is one used to make the fakes.

disaster. Cost me £4.46 for 6. Here they are drying. Found a sweet
potato so doing the Thai mash to go with the scallops
