Julia,
This looks delicious! The scallops we get here in northeast US are usually
fresh, although we can get them frozen. But fresh, dried scallops are the
best, no water or chemicals added. I do have to take the muscle off. May try
this one.

Years back, I did a scallop seared dish finished with a champagne cream sauce
that was good.
Need to find that one again

I just finished dinner. Am so thrilled all worked out and one of the nicest
meals I have had and so simple. I just added fresh coriander/cilantro to the
sweet potato with a tiny bit of Thai Red Curry paste, some butter as did not
want to open a can of coconut milk just for a tbsp. or two. Added a few drops
of the dressing.
The scallops came out to perfection which I served on a bed of rocket and
watercress and drizzled with the Thai dressing. Only a little as it was very
fiery.

Kelly, I never saw the orange roe in the U.S. which makes me think scallops
there are fake especially as they are perfectly round....cookie cut?
Did you see where I had posted a link to counterfeit ones. NSomething really
weird happened when I replied to Hal as came back undeliverable so had o fiffle
around with it and resend.

Pan-Seared Scallops Recipe
Hal, I just found this too which similar but good description of bay and sea
scallops. The ones we buy here are quite large and have the Orange roe
attached. I recall way back when I lived in Florida that scallops sold there
were actually cookie cut out of something else and for the life of me cannot
think what....something like stingray.
Oh, found it, was right as stingray is one used to make the fakes.

Am going to make mine soon and will post pic unless it turns out a disaster.
Cost me £4.46 for 6. Here they are drying. Found a sweet potato so doing the
Thai mash to go with the scallops
