Specifically, quotes, apostrophes and probably other punctuation 
characters come through as little empty rectangles when the email is read as

text only.

Curly quote and Curly apostrophes do come thru as empty rectangles when the
email is read as text because those characters don't have plain text
equivalents.

I believe that N-dashes and M-dashes do the same and ellipses do also (but
I'm not sure).

I think the solution is to not use such characters. Use plain quotes and
apostrophes. Use plain hyphens. And use three periods instead of ellipses.
