Must be an addition post-PS6, which is the version I have. Anyway, problem solved using PNG instead of GIF.

I have managed to manipulate the original image to create a transparent background, but when I save as GIF there is no 'transparency' box as you describe. Hence the d**n thing goes back to white again ...
