route your jaws cursor
page down and place the cursor on a letter in the sheet name then left click.
this should open an edit field you can type in

I use JAWS 11 and Microsoft Office 2007. By default, there are three sheets,
Sheet 1, Sheet 2 and Sheet 3 in Microsoft Excel work books. How do I rename
