Hi Chad,

Microsoft Word was designed to have a default state for all documents.  It
happens that one of the defaults is single space.  What you can do is type
your documents, select all with Control A, then press Control 2 to change it
to double space.  There is a way to change the default line spacing, but
once you do it, you will have to remember to change it back to single when
you want to type a letter or other document that doesn't demand double
spacing.
