It is there for testing purposes, and for redundancy if needed. It doesn't have 
an IP now, but when used for testing it does.

If your second MX record does not have an IP associated with it, why have
it?

http://www.dnsreport.com/tools/mail.ch?domain=esullivan@xxxxxxx shows that
DNS is set up correctly, but that the second MX is not reachable.
