I was intrigued with your question but the answer is simple enough!
When you open the CC field for editing (insertion point at end!) swipe back up
to the add contact button and you will be presented with the full list of
contacts.
If you have put yourself into the contacts list you can select that email and
it will appear in the CC field as that is the active edit box at this point. It
does not matter whether you have anything in the To field or not.
Another way is to use an app called "MeMail" or "send to self" both free in the
app store. I have not used either but the instructions say that, when
installed, they are available to share in the context menu for the active
email.
If you are thinking of using a CC: fiield as confirmation that an email sent to
a Freelists link such as fb-exchange @freelists.org or the VIP students list
which is also on Freelists, be careful. Finding an address in the CC. field of
an email to the list can cause the Freelists service to reject the email and
block it from sending.
