When you open the CC field for editing (insertion point at end!) swipe back 
up to the add contact button and you will be presented with the full list of 
contacts. 
If you have put yourself into the contacts list you can select that email and 
it will appear in the CC field as that is the active edit box at this point. 
It does not matter whether you have anything in the To field or not.

Hi Cearbhall, all, 

Yes an interesting question that’s for sure. 

In relation I wonder is it necessary always to go to contacts to add in?

I find that if I try to type in an address say that I remember and which is not 
in my contacts it proves difficult as the phone is always trying to bring me 
there. 

As I wrote here before the insertion point too I’d like to know more of?
