I do not have any Prybars, got wrenches though. How big do wrenches need
to be?

Any footgear would be OK as long as they have non-slip soles we probably won't be lifting anything over 50lbs or so. We might need a prybar or two and maybe wrenches if we have to install safety bolts.

The best I have is hiking boots, those gonna be good enough or do you require steel toed shoes? K on the gloves & Hammer.
Do we need socket sets, wrenches, etc?

Work clothes, gloves if you like. Mike suggests hammers to knock the pallet rack components into place. Climbing shoes. We'll be climbing the pallet racks as we build them.
