That's a bit out of date. I'd like to say you've missed 10 years of updates, but there's not been much activity since May 2006. Unicode was the last big addition.

That will get you a document that won't work on RISC OS.

Good warning, so perhaps best left as a temporary, not saved choice.
The setting is a document preference (obvious), but you can make it the default for all new documents. Some people only use Windows and need Unicode all the time.
