If I remember correctly, the basic premise behind spraying food with cooking
spray before it goes into the air fryer is that it helps to mimic the results
of real fried food, cooked in hot oil. Personally, I think that's just silly.
When food is shallow fried, or deep fried in particular, what is basically
happening is that the water inside the food being fried is boiling and turning
to steam, and escaping through tiny pores in the surface of the food. As long
as the pressure of the steam coming out is greater than the pressure of the oil
trying to get in, your food will not be greasy. This is why using correct
temperatures when frying various types of food is so crucial. If the
temperature is too low, the oil will get into the food, and the food will be
excessively greasy. When you spray cooking spray on the surface of foods in the
air fryer, you are not getting the same effect at all. I personally think you
would probably be a lot better off just tossing the chicken or whatever food it
is, with a tablespoon of the oil of your preference, then putting it into the
air fryer. I see no reason to use the cooking sprays if you are uncomfortable
with all of them. As a quick side note, not all cooking sprays leave residue on
bakeware. Some cooking sprays are specifically designed not to leave a residue
behind, once the dish has been washed with regular dish soap.
