Your trouble is that you're inadvertently selecting multiple tracks and performing operations on all of them, rather than the single track you want. Pay attention to JAWS saying "selected" or just the track number. When it says "selected," the track is selected for recording or any other operation. When JAWS just reads the track name and/or number, it's not selected and you must press enter on it in order to select.
