They use six axis MEMS gyro/accel or nine axis MEMS
gyro/accel/magnetometer, sometime with GPS and/or optical assistance,
which you can borrow for rockets quite easily by using one of the
commercial MEMS accelerometer-based rocket flight computers linked to
earlier in this thread.
