this may be the way forward in my case then.  But I still like the pen drive
idea.

No.  Just plug the Dongle in and it makes the installation a
full one.

The nice thing about this method is that if you only want to
jump on to a system for a brief spell, the demo will give
you up to 40 minutes of use before you need to re-boot.
