I think the thing Lyn is referring to here - at least partly, is the way that 
Mac OS X being UNIX based allocates the RAM. If you have 2GB of RAM Mac OS X 
will actually allow you to use it all. There is a noticeable improvement too, , 
because the OS is far lighter than Windows du at least in part i suspect to the 
fact that there is no Registry or DLL files etc. 

As Mac OS X is built upon a UNIX foundation and UNIX was (and still is) 
designed to be a true multi-user operating system, the whole experience is at 
least in my opinion far smoother and faster due not only to the power and 
design of UNIX, and the reasons I've given above, but also to Apple's 
philosophy. 

I'm sure Lyn will chime in with other reasons that she has, but that is just 
part of what makes a Mac experience  so fulfilling. I can't really speak for 
the responsiveness of JFW vs VO as i don't use the Windows Screen Readers 
enough anymore to make that comparison accurately. And besides, you are 
comparing two different Assistive Technologies on two different platforms each 
using a very different approach. Having said this, though, I would say that 
once user is comfortable using VO, they are at least as fast as a JFW or WE 
user in getting things done, if not quicker.
