  It protects the interface surfaces, the threads on the head in this case.  
Unlike grease or oil on the threads anti-seize is good for over 1500F.  Just 
don't goop it on.  

  If you think about it when you torque the plugs you pull on the threads 
creating stress, if there's a burr or deformation on the threads in the hole or 
the plug then you'll create stress at that point.  Changing plugs over and over 
can cause the same area to become worn or cracked.  Lubrication and protection 
of the interface surfaces are the two main uses.  Therefore use anti-seize and 
don't get crazy with the torque on the plugs.

  That's why I cringe when I see somebody use an air rachet on a spark plug.

    OK Will, I also always use anti seize on the plug everytime I put one in.  
This keeps them from seizing when you take them out the next time, but how 
would it prevent one from blowing out?  Ultimately strips the threads out from 
prior removals?  Just curious.
