Rich:
Langlais "Pasticcio" from Langlais Organ Book is a nice piece and not too
hard --
actually it is fairly easy -- and sounds harder than it is. I too am a
non-professional.
All of Bach's Little Preludes and Fugues are good learning material, and
some are
suitable for postludes, in my opinion.
