DoF is (mostly) about aperture and image magnification. If you set up the 4x5 to produce the same size image as the 35mm, you'll get the same DoF -- doesn't matter what lens you use. So, when you increase the image magnification to fill the 4x5 frame, DoF decreases and you need a smaller aperture. To get the same DoF in a full- frame 4x5 as you did in the full-frame 35mm, you need to stop down about 5 stops. However, if the subject and composition allow, you may be able to use the 4x5 camera's movements to reduce the DoF necessary to render the subject in sharp focus. (But that's another subject....)
