Eric,

I have a couple suggestions for discussion topics.

Advanced Extract Brewing - I know we have several members who mainly brew 
extract. We could discuss some techniques and trick they have picked up along 
the way. Maybe things like Full Volume Boil, Late additions of extract to 
promote better hop utilization, etc. Probably skip the partial mash techniques, 
and do a separate discussion on that. 

Brewing to Style - If someone has really mastered a style, they could give us 
tips on the special techniques and ingredients needed for that style. 

Making a Yeast Starter - Very important and very easy! 

Brewing with lager yeast - Techniques, how it varies from ale yeast 
fermentation, is temp control needed?, etc.

What to do when your brew day goes wrong - some on-the-fly tips for "one of 
those days". Missed original gravity, "Oh no, the recipe called for a 10%AA 
bittering hop, and all I have are these 4.5% EKGs!...", Stuck sparges, stalled 
fermentation, etc. 

Going All-Grain - advantages, equipment needed, etc.

Based on last night's meeting, it sounds like we are off to a good start for 
education topics for the year. Let me know if I can do anything to help.
